Spring has (hopefully) arrived, so I decided to get my fresh on with a trip to Lake Edge Seafood Company. Since I’ve had po’boys in New Orleans, I was eager to try a local take on the classic. Lake Edge has a modern rustic decor, with plenty of nautical accents, so I stepped up to the counter to order their po’boy with fried shrimp (you can also get calamari or fried fish), lettuce, tomato, Cajun remoulade and Louisiana hot sauce on a French hoagie roll.
Bread: 4.8/5
The hoagie was fresh, a little warm, and had the right balance of crunch and soft. It also was just the right amount of bread for the makings, making it a worthy vessel to carry my fried shrimpy goodness.

If the shrimp can’t hold its own on a po’boy, you’re in trouble. That was not the case here. The shrimp was fried well, with a little spring and bounce when you bit in, and breading that was neither too thick nor greasy. The remoulade and hot sauce added a little zing, while the lettuce and tomato balanced it out.
Architecture: 4.5/5
With any sandwich with big, chunky fillings, you run the risk of not getting an even break when you take a bite. I had a few full shrimp pull out on bites and some sauce drips, but the integrity of the roll and makings held until the last bite.
Value: 4.1/5
This was a more difficult category to tackle. You get the sandwich and one side for $14.95 which is a little expensive for lunch, but it was worth the extra dollars. Everything — from the roll to the remoulade — indicated it was made to order with the freshest ingredients available.
Overall: 4.7/5
My sister also tried the fried shrimp po’boy and we both left impressed, particularly with the freshness. That detail bumped it up a level for me, and we both left full and content.
